Olivye Recipe
Description
Olivye salad is a traditional national salad dish popular today all over the world and also known a Russian Salad. Despite of many modern variations and recipes it is always basically made of boiled potatoes, eggs, meat, cucumbers and mayonnaise.
This salad was invented in 18th century by Belgian cook who lived in Russia Lucien Olivier. He was the Chef in one of the most famous Russian Restaurants – the Hermitage Restaurant.
Ingredients (for 4 persons)
400 g meat (beef)
500 g canned green peas
5 eggs
500 g potatoes
200 g cucumbers or pickled cucumbers
200 g mayonnaise
1 white onion (to taste)
1 orange (to taste)
Salt and Pepper (to taste)
Directions
First boil meat. Put it in a pan with water and boil for 1-1,5 hour. Check that your meat is ready and has no blood inside.
Peel potatoes and boil them till they will be ready (15-20 min). Boil also eggs for 10-15 minutes. Cut meat, cucumbers and potatoes into small cubes. If you want to add to taste onion, orange you also cut them into small cubes. Add peas and mayonnaise. Mix all ingredients with mayonnaise adding salt and pepper to taste.
