Pelmeni (Meat Dumplings)
Description
Pelmeni or Meat Dumplings is a traditional Russian dish.
Every home has its own recipe of pelmeni. Pelmeni consists of meat and dough. Message is that you put small amounts of minced meat inside dough and boil it for some time. You can use one sort of meat or mix (mince) two or even three kinds of meat. We advise to by a whole meat and grind it yourself. Any way you can buy farce (minced meat) in any food market.
Ingredients & Directions (3-4 persons)
To make the dough you need eggs and water. The dough should be rather firm not to fall apart in the water. When you dough is ready, you need to roll it and to cut into equal round pieces (to do this you can use a cup). You put meat inside every round piece of dough and fold it in half diagonally to close your pelmeni.
You can also add some other components inside your pelmeni to taste like chopped parsley, garlic or black pepper to taste.
To make dough (1 dinner portion for 3-4 people) you need 3 -4 cups of flour, 1/2 or 2/3 cup of cold water, 2-3 eggs and salt to taste (one –two pinches of salt will be enough). Mix properly in a big bowl all ingredients and let the dough get up. You should mix dough 5-15 minutes. The liquid should absorb all flour without making any lumps (homogeneous mixture). Keep your dough in bowl for some time. It should sit there at least 20 minutes. Carefully cover your bowl not to let air get inside!
When your dough is ready roll it to become thin and flat. After this make round pieces and put inside minced meat with other ingredients. Don’t forget to salt a little your meat before putting inside. You should place meat into the middle of your circle. Folding the dough over it should look like a half moon.
Carefully put your pelmenis into boiled water for 5-7 minutes. We Russians believe that after 5-7 minutes our pelmeni should pop up from bottom of a bowl and might be ready.
To taste we like to eat pelmeni with sour cream or with butter. We can also sprinkle pelmeni (when they are ready) with grated chease and chopped dill, parsley etc.
